Savory, salty and naturally sweet with an oh, so subtle kick of heat – these delightful chips are a snack you can feel good about!

Making chips from sweet potatoes is hardly a new idea. My Grandmother was known to whip up a batch of these crispy treats using sweet potatoes straight from her garden. Though often fried, this version is baked taking away a bit of the guilt from snacking on chips. The list of ingredients is a short one. Sweet potatoes tossed with olive oil and a sprinkling of kosher salt plus both chili powder and garlic powder along with freshly cracked black pepper.

Once they’re coated in olive oil and seasoning, these thin slices of the deep orange root vegetable are spread over wire racks allowing the heat to swirl around them.

They emerge from the oven curled, crunchy and quite tasty!

Ideal for an afternoon of snacking and relaxation!

Spicy Sweet Potato Chips

2 pounds sweet potatoes, washed and scrubbed

2-¼ tablespoons olive oil

2 teaspoons kosher salt

½ teaspoon chili powder

½ teaspoon garlic powder

½ teaspoon freshly cracked black pepper

Trim the ends off the sweet potatoes and slice them as thin and evenly as possible. A mandoline works really well for this.

Toss the slices in a large bowl and drizzle with the olive oil. Use your hands to completely coat the slices if needed. Whisk together the kosher salt with the chili powder, garlic powder and black pepper.

Add about half of the seasoning to the potatoes. Line 2 to 3 rimmed baking sheets with foil then place a wire baking rack over the top. Spread the slices of potatoes on the racks allowing only minimal overlap.

Sprinkle with about ¼ of the remaining seasoning. Bake in a 300-degree oven for 50 to 60 minutes or until the chips are cooked through and crispy.

Give the chips a taste and add some of the remaining seasoning if needed. Makes about 6 cups of chips.
