Apple, Pumpkin, and Kale Juice

Fresh, clean and lightly sweet with a subtle note of that lovely warmth only fresh ginger can bring – this is the perfect way to midweek rejuvenation!

This time of year brings added stress and a crunch on our time. Blended juices are a great way to start your morning or offer a “pick me up” during the day. And they’re so very easy to make.

Apple juice is a great base for blended drinks, adding just enough sweetness to the mix. Then pull from some glorious autumn flavors including apples, pumpkin, and pears along with that bright, warm tang of ginger to liven things up just a tad.

Now hang with me here – turn up the vitamin goodness and throw in a handful of crisp, green kale turning this drink into a refreshing tonic boost. Even if you’re not a fan of kale give it a try. Kale is packed with vitamins and minerals, something we can all use this time of year!

Blended juices come together in a matter of minutes making them ideal to have on hand for the upcoming holidays.

All you need to do is core and remove the stems, no need to peel the apples or pears.

The mix of ingredients you can use to make blended juices is unlimited so use your imagination. But this juice is a great place to start!

Apple, Pumpkin, and Kale Juice

2 to 2-½ cups apple juice

1-½ cups pumpkin puree, canned pumpkin works great

3 apples, cored and cut into pieces, use your favorite sweet apples

1 ripe pear, cored and cut into pieces, Bosc or your favorite

1-½ cups kale, rinsed very well and chopped

2 tablespoons peeled and sliced fresh ginger

Pour 2 cups of the apple juice into the blender then add the pumpkin puree.

Toss in the apples and the pear and start processing the mixture on the low speed for about 10 to 15 seconds then raise the speed to high, using the tamper as needed to blend together.

Add the kale and the ginger then continue blending on high speed for about 1 minute. Pour in the remaining ½ cup of apple juice.

The juice will be thick at this point.

If you prefer, strain it through a sieve to remove the excess pulp. Keep refrigerated and serve chilled.

Makes about 4 cups of juice.

Ingredients
  

  • 2 to 2-½ cups apple juice
  • 1-½ cup pumpkin puree
  • 3 apples, cored and cut into pieces, Honeycrisp, Gala, Fuji or your favorite
  • 1 ripe pear, cored and cut into pieces, Bosc or your favorite pear
  • 1-½ cups kale, rinsed well and chopped
  • 2 tablespoons peeled and sliced fresh ginger

Instructions
 

  • Pour 2 cups of the apple juice into the blender.
  • Add the pumpkin puree along with the apples and the pear.
  • Start processing the mixture on the low speed for about 10 to 15 seconds then raise the speed to high, using the tamper as needed to blend together.
  • Add the kale and the ginger then continue blending on high speed for about 1 minute.
  • Pour in the remaining ½ cup of apple juice. The juice will be thick at this point and if you prefer you can strain it through a sieve to remove the excess pulp.
  • Keep refrigerated and serve chilled.

Notes

Canned pumpkin is perfect for this drink and use your favorite sweet apples.
Also, kale often has sand dirt trapped in its curly leaves. Washing and rinsing it in a sink of cold water several times works in cleaning the kale. This also an ideal way to clean fresh parsley.
