New Year’s is the perfect time to pop a cork and break out the bubbly. And with a twist or two this cocktail turns up the fun on the traditional sparkling wine. Add a subtle note of citrus with a gentle twist, a light touch of sweetness from a glistening cube of sugar topped with the spice of angostura bitters!

More commonly known as the Champagne Cocktail we tend to have prosecco on hand, so we went with that for our sparkling wine. Add a few simple ingredients starting with a sugar cube, angostura bitters, plus a twist of citrus from oranges or lemons.

It’s easy to pull together and it will turn up the volume on your presentation for celebrations. Sugar cubes can be found at specialty food markets and in a pinch, you can make your own.

Angostura bitters are available in most liquor stores with other mixer ingredients. Bitters deliver a note of spices, citrus, and herbs dropped onto the sweet cube of sugar then dropped into the bottom of an elegant fluted glass.

Top with chilled bubbly and garnish with a twist of orange or lemon twist and you’re all set for the perfect toast!

Champagne Cocktail

For each cocktail:

1 cube of sugar

2 to 3 drops angostura bitters

Prosecco, champagne, or your favorite sparkling wine

1 orange or lemon twist

Place the cube of sugar on a spoon. Shake the angostura bitters on the sugar.

Drop the sugar cube into the bottom of a champagne flute. Pour in the sparkling wine.

Give the orange or lemon twist a squeeze to release the oils and drop it into the glass or hang it off the side.

If you can’t find cubes of sugar you can make your own. Makes one cocktail.

Sugar Cubes

Mix ¼ cup water with ½ teaspoon water or orange water. Pack the sugar mixture into small molds or mini muffin liners. Let the sugar cubes dry overnight.

Makes 8 to 10 molded cubes of sugar.

Ingredients
  

  • 1 cube sugar

  • Place the cube of sugar on a spoon. Shake the angostura bitters on the sugar.
  • Drop the sugar cube into the bottom of a champagne flute and pour in the sparkling wine.

I tend to lean towards a glass of prosecco, but if your preference is champagne either will give you beautiful results.
