It’s the end of the week and I’m trying to decide if I need a bit of coffee for a burst of energy or a cocktail to wind things down. Think I’ll shake it up and do both!

Rich, robust and ridiculously good. It’s a simple cocktail with bar ingredients most everyone has on hand. The foundation of this drink is Kahlúa, a favorite liqueur created in Mexico in 1936. This delightful coffee liqueur is followed by a splash of vodka along with a generous shot of espresso.

With more depth and intensity than a cup of brewed coffee, espresso brings a smooth note to this cocktail. If you don’t have access to an espresso machine, making espresso with  instant espresso powder works in a pinch. It’s a great thing to keep in your pantry – not only for coffee infused beverages but it also gives a fabulous boost to the flavor of  your favorite chocolate cake!

Or just stop by your favorite coffee shop and ask the barista to pull you a couple of shots to go. Then fill the cocktail shaker with ice and shake until things are really cold.

A deliciously refreshing and relaxing way to enjoy a late afternoon boost!

Espresso Martinis

3 ounces Kahlúa – 6 tablespoons

2 ounces good vodka – 4 tablespoons

2 ounces espresso – 4 tablespoons, cooled to room temperature

Ice for shaking the cocktails

For the martinis:

Pour the Kahlúa into a tall cocktail shaker.

Add the vodka along with the espresso.

Fill the shaker with ice, secure the lid and shake vigorously until the martinis are mixed and very cold.

Strain the cocktails into martini glasses and serve while well chilled!

Makes 2 martinis.
