Looking for something a wee bit decadent to celebrate St. Patty’s Day this weekend? Look no further than this luscious cocktail boasting both Irish whiskey and Irish cream in the mix! Throw in a generous splash of dark roast coffee, a scoop of luscious coffee ice cream and you’re sure to please even the fussiest leprechaun!

I’m not really sure if I would classify this as a cocktail or a dessert. It really doesn’t matter because it checks a lot of boxes! In its purest form, an affogato is an Italian inspired dessert with a scoop of ice cream bathed in espresso. Glorious, but this version makes you want to pinch someone!

Start with a great Irish whiskey. I had been reading reviews on Irish whiskeys when I first ran across notes on Teeling Small Batch Irish Whiskey. This beautiful, smooth whiskey doesn’t’ disappoint. With partial aging in rum casks the result is a smooth slightly earthy, fruity profile. And you can’t leave out the Bailey’s Irish Cream! A beautiful blend of Irish whiskey and cream, it’s a classic liqueur. Just pouring it to a simple cup of coffee creates something quite special.

So imagine the two swirled together with a scoop or two of coffee ice cream and the warmth of a dark roast coffee, slowly melting into the mix.

Top with fluffy whipped cream and for good measure a sprinkling of bittersweet chocolate – indulgence is a sip away!

Irish Whiskey Affogato

3 tablespoons good Irish whiskey, such as Teeling Small Batch

2 tablespoons Bailey’s Irish Cream

1 or 2 scoops coffee ice cream

6 tablespoons hot dark roast coffee

Whipped cream and chopped bittersweet chocolate for garnish

Pour the Irish whiskey and the Irish cream into a large highball or mug, stirring to mix.

Gently add the ice cream on top of the spirits.

Slowly pour the hot coffee over the ice cream.

Top with a dollop of whipped cream.

Add a sprinkling of the chopped chocolate if desired.

This makes 1 large cocktail.
