A bright zing from a crush of fresh ginger mingled with coconut and lime then blended with the gorgeous floral notes of a great gin. It’s a wonderful cocktail and ideal for welcoming the weekend!
Playing off one of my favorite ingredients, I stumbled across a recipe using coconut and gin. It provided a bit of inspiration plus an avenue to make use of items that are hanging out in my kitchen after a week spent playing with recipes, all using coconut and coconut milk.
This is a fun twist on the classic gin and tonic, one of my favorite cocktails. Fresh ginger is muddled with flakes of sweetened coconut followed by a generous pour of gin. Then a splash of fresh lime juice and coconut milk are added along with a dose of simple syrup to smooth things out.
Finish by topping the cocktail off with a refreshing fizz compliments of a vibrant tonic water.
Then add a slice of lime plus an extra sprinkle or two of coconut and you’ve got a delicious libation perfect for making the leap out of February!
Coconut, Ginger, Lime Gin and Tonic
2 tablespoons chopped fresh ginger
2 tablespoons sweetened flaked coconut, plus extra for serving
8 tablespoons (4 ounces) good gin, such as Nolet’s Silver Dry Gin
4 tablespoons (2 ounces) unsweetened coconut milk
4 tablespoons (2 ounces) freshly squeezed lime juice, about 1-1/2 limes
3 to 4 tablespoons simple syrup*, to suit your taste
Ice for shaking and serving
6 tablespoons (3 ounces) tonic water
Slices of fresh lime to garnish
*I use 4 tablespoons of simple syrup, but use the amount that suits your taste.
Toss the ginger and the coconut into the bottom of a cocktail shaker. Using a muddler, crush the two together.
Pour in the gin along with the coconut milk, lime juice and simple syrup.
Fill the shaker with ice and shake the cocktail until it’s mixed and well chilled, about 20 to 30 seconds.
Add ice to 2 highball glasses and pour a portion of the cocktail into each glass, filling them about 3/4 full. Add 3 tablespoons (1-1/2 ounces) tonic water to each cocktail, stirring to mix.
Garnish with a slice of fresh lime and a sprinkling of coconut.
Makes 2 large cocktails.
