Luscious clouds of sweetened whipped cream folded into fresh peach purée brightened with lemon. It’s a simple base for Peach Ice Cream, a summertime favorite – and it can be pulled together in no time at all!

Summer has arrived and as the season turns to summer peaches arrive in abundance. This stone fruit is one of the South’s most beloved and one that we look forward to gathering up. There are so many ways to enjoy this gorgeous fruit and ice cream is most certainly on the list. But what to do if there’s no ice cream maker at hand?

I ran across this recipe in Mom’s vast collection. It’s a simple recipe that yields delicious results. Purée peaches and stir in lemon juice and lemon zest to highlight the fresh fruit.

Fold in fluffy whipped cream, sweetened with powdered sugar plus a splash of pure vanilla extract to enhance the peach notes.

Then scoop the base up, freeze until set. That’s it. It’s an “old school” way to make ice cream, and one the kids will love!

Easy Peach Ice Cream

6 peaches peeled and sliced

Zest of 1 lemon

1 tablespoon lemon juice

1 cup whipping cream

1 cup powdered sugar

1 teaspoon pure vanilla extract

Using an immersion blender or a blender, purée the peaches with the lemon zest and lemon juice until smooth. Measure out 1-½ cups of purée.

In a separate bowl, whip the cream until it begins to thicken. Add the powdered sugar and the vanilla extract.

Continue beating until stiff peaks form.

Fold the peach purée into the whipped cream, taking care not to deflate the cream.

Transfer the ice cream base to a freezer proof container. Freeze for 3 to 4 hours until set.

You can also add chunks of peaches to the base if preferred. Peaches contain a fair amount of water so this ice cream will freeze solid overnight. Just let it set at room temperature for about 10 minutes, or until soft enough to scoop. Makes 4 to 6.
