It’s a curious drink, muddled with cucumbers and fresh dill plus a squeeze of lime then blended with St~Germain and gin. Finish with a light pour of simple syrup - the nectar of the South – and you’ve got an unexpected yet refreshing cocktail at your fingertips!

Ingredients
4 to 5 slices cucumber plus extra for garnish
1 dill sprig
2 ounces St~Germain
2 ounces gin, preferably Plymouth Gin
3 teaspoons freshly squeezed lime juice
3 teaspoons simple syrup*
Instructions
Place 4 to 5 slices of cucumber and a dill sprig in the bottom of a cocktail glass.
Using a muddler, crush the cucumber and the dill.
Pour in the St~Germain, gin, lime juice, and the simple syrup. Give it a stir to blend well.
Top with ice and garnish with an additional cucumber slice perched on the rim of the glass.
Notes
*To make a batch of simple syrup, combine 2 cups of water with 3 cups of sugar in a small saucepan. Warm over medium heat, stirring frequently until the sugar has completely dissolve. Store in the refrigerator.
