Coconut, Ginger, Lime Gin and Tonic

A bright zing from a crush of fresh ginger, mingled with coconut and lime, topped with the gorgeous floral notes of a great gin. It’s a wonderful cocktail ideal for welcoming the weekend!

Ingredients
  

  • 2 tablespoons chopped fresh ginger
  • 2 tablespoons sweetened flaked coconut, plus extra for serving
  • 8 tablespoons 4 ounces) good gin, such as Nolet’s Silver Dry Gin
  • 4 tablespoons (2 ounces) unsweetened coconut milk
  • 4 tablespoons (2 ounces) freshly squeezed lime juice, about 1-½ limes
  • 3 to 4 tablespoons simple syrup*, to suit your taste
  • Ice for shaking and serving
  • 6 tablespoons (3 ounces) tonic water
  • Slices of fresh lime to garnish

Instructions
 

  • Toss the ginger and the coconut into the bottom of a cocktail shaker. Using a muddler, crush the two together.
  • Pour in the gin along with the coconut milk, lime juice and simple syrup.
  • Fill the shaker with ice and shake the cocktail until it’s mixed and well chilled, about 20 to 30 seconds.
  • Add ice to 2 highball glasses and pour a portion of the cocktail into each, filling them about ¾ full.
  • Add 3 tablespoons (1-½ ounces) tonic water to each cocktail, stirring to mix.
  • Garnish with a slice of fresh lime and a sprinkling of coconut.

Notes

*I use 4 tablespoons of simple syrup, but use the amount that suits your taste.
