Ginger Spiked Carrot Juice

Bright, naturally sweet with just a touch of tang – this is the perfect way to start the day!

December is here and before we get overwhelmed with sweet treats and holiday goodies this juice offers a refreshing break. I have more than a few carrots left from making the Carrot, Sweet Potato and Ginger Soup. Plus, I’m gearing up to make our Ginger Pear Jam, so I happen to have a large amount of fresh ginger root on hand. So I started flipping through the Vitamix recipes for inspiration and this delightful juice was an easy choice.

Made with carrots, apples and apple juice plus a good dose of fresh ginger this fresh nectar is ready in minutes.

You can freeze the carrots for about 30 minutes to add an extra bit of chill to the juice. They will look a little ragged when you peel them but it won’t impact their flavor.

Use your favorite apple – Honeycrisp is a good choice if you like a really sweet apple flavor and the Smitten apple, which is a newer apple variety provides sweetness with a bit of tart in its bite. For the juice you can use either apple juice or apple cider – whichever you prefer or happen to have on hand.

Ginger Spiked Carrot Juice

1 cup apple juice or apple cider

1 apple, such as Honeycrisp, Smitten or Gala, cored and quartered

3 medium carrots, ends trimmed, peeled or scrubbed and cut into pieces

2 teaspoons chopped fresh ginger

1 cup ice cubes

Pour the apple juice or cider into your blender and add the apple.

Process for about 10 to 15 seconds on medium speed just to blend together.

Add the carrots, the fresh ginger and the ice cubes. Process the juice using the high setting for about 30 to 45 seconds.

Serve well chilled.

Makes about 4 to 6 servings.
